Summer Salad: Apple, Walnut and Blue Cheese with Arugula

This is a super easy and super healthy salad. The peppery arugula balances against the sweetness of the apples and honey. The blue cheese adds a salty creaminess and the toasted walnuts a nice crunch. Serves four!

You will need: 

Pink Lady apples sliced: 1 cup
Green Delicious apples sliced: 1 cup
Arugula: 2 cups
Toasted walnuts: ½ cup
Crumbled blue cheese: ½ cup
Honey: 3 T
Fresh lemons: 2 ea   
 
Method:
  1. Mix the juice of two lemons with honey.
  2. Toss all ingredients together
  3. Enjoy!
